This Red Velvet Cheese Ball is Going to be a Huge Hit!

blog-red velvet cheese ballRed Velvet cake is quite possibly the best I’ve ever had. It’s easily my favorite and I can never get enough! When I saw this picture on Pinterest, I was instantly interested. I was brought to this blog where I was able to see the original picture and recipe (sorry, I totally can’t take credit for this awesome recipe). Check it out!

You will need:

  • 8 ounces cream cheese, at room temperature
  • 1/2 cup butter, at room temperature
  • 1 1/2 cups red velvet cake mix, dry
  • 2 tablespoons brown sugar
  • 1/2 cup powdered sugar
  • 1/2 cup mini chocolate chips
  • assorted cookies and crackers (my favorite was Vanilla Wafers)

How to:

  1. In the bowl of a stand mixer, beat the cream cheese and butter until smooth. Add in the red velvet cake mix, the brown sugar and the powdered sugar. Beat until smooth and combined.
  2. Turn the mixture out onto a piece of plastic wrap. Wrap up into a ball and refrigerate for at least 2 hours.
  3. Put the chocolate chips on a plate or in a shallow dish. Remove the cheese ball from the refrigerator and unwrap. Roll in the chocolate chips. (This might get messy!) Place on a serving plate and serve with cookies or graham crackers.


This Confetti Cucumber Salsa is Fresh, Light, and Perfect for Summer!

blog-confetti salsAlthough there isn’t a ton of time left in the short season of summer, there is still some time for plenty of grill-outs, picnics and time outside to enjoy the summer weather.

I found this recipe for Confetti Cucumber Salsa on Simply Recipes  and think it’s something that I will love! You can check out the link and find it, or see it below.


  • 1 large cucumber or 2 small cucumbers (about 1/2 pound to 3/4 pound total), seeded and finely diced (peel first if the cucumber is thick-skinned, leave peel on if thin-skinned)
  • 1/4 cup finely diced red onion
  • 1/4 cup finely diced red, orange, or yellow bell pepper
  • 2 Tbsp chopped fresh mint
  • 1 Tbsp rice wine vinegar
  • 1 Tbsp olive oil
  • 1/4 teaspoon salt
  • 1 teaspoon minced jalapeño (more to taste)


To make the salsa, place all of the salsa ingredients into a medium bowl, and gently stir to combine. Taste and add more jalapeño if you desire more heat.

Keeps for several days, covered and chilled in the refrigerator.

I’ve Heard This Crockpot Mac and Cheese is Super Yummy!

blog-cpmcI tend to use my Crock-Pot a lot more in the winter than I do in the summer. However, when I came across this recipe on Pinterest when a couple of my co-workers were talking about it and saying how delicious it was. Most of them have children, and they said that it was a HUGE hit with the kids and that they asked for it again the next day!

This Copycat Chipotle Cilantro Lime Rice is Awesome

blog-clHave you ever found a recipe before that you didn’t think you would be able to find or make? This is the best feeling and the anticipation really builds when you have to wait!

One of my favorite places to eat is Chipotle. I love the rice there and was super excited to try out this recipe. You can access the original picture and recipe here, or check it out below:

You will need:

  • 1 cup of extra long grain white rice
  • 2 cups water
  • 2 tsp oil
  • 2 tbsp lime juice (you can also use one medium lime if you prefer, but I went with the juice since fresh limes are so expensive right now)
  • 1 1/2 tsp salt
  • 3 tbsp freshly chopped cilantro
  1. Soak rice in a bowl of cold water for ten minutes. This is optional, but helps it from getting “mushy” while cooking. Drain.
  2. Heat oil over low heat in a skillet and add rice. Cook for one minute and add water and salt. Bring to a boil and allow to cook for 5-10 minutes, or until a lot of the water has evaporated. When there is there is just a little water skimming the top of the rice, reduce heat to low and cover. Cook for an additional 15 minutes, stirring occasionally.
  3. Remove rice from heat, keep covered, and let sit for another 5 minutes.
  4. In a separate bowl, add cilantro, lime juice, and rice. Stir, serve, and enjoy!

Simply Recipes is Another Awesome Website Full of Yummy Food!

blog-med. potato saladIn the summer, I really like to try to cook more. I feel like I have more time to do so, and the availability of food increases as more comes into season.

Since I don’t remember the last time that I opened a cookbook to look for a recipe, I almost always look online. There are SO many websites and blogs full of great recipes (not that they can’t be found in a good old fashioned cookbook) that the things you can find are endless!

One of my favorite websites to visit for recipes lately is called Simply Recipes. They tend to post more light and healthy meal options which is great for summer and somebody that is watching their waistline!
